Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels and season with salt and black pepper.
  2. In a cast iron skillet, heat olive oil over medium-high heat. Sear the chicken thighs skin-side down for about 5 minutes until golden brown.
  3. Flip the chicken and sear the other side for 3 minutes. Drain excess fat, then add butter and garlic to the skillet, sautéing for 30 seconds.
  4. Transfer the skillet to the oven and bake the chicken for about 30 minutes until it reaches an internal temperature of 165°F (74°C).
  5. Remove from the oven, spoon the sauce over the thighs, let rest for 5 minutes, and garnish with parsley before serving.
