- Begin by cutting the chicken breasts into 1-inch chunks. In a bowl, combine chicken pieces with 2 tbsp cornstarch, a pinch of salt, and pepper. Toss to coat evenly.
- Heat 1/4 cup vegetable oil in a large skillet over medium-high heat. Add chicken in batches, cooking about 3 minutes per side until golden brown.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
- Pour in water, soy sauce, apple juice, chicken broth, ketchup, bourbon, white vinegar, brown sugar, ground ginger, and onion powder. Stir and bring to a gentle boil.
