For the Meatloaf
  • 2 pounds Ground Beef (80/20) or substitute with ground turkey
  • 1 cup Shredded Swiss Cheese mozzarella or cheddar can substitute
  • 6 slices Cooked Bacon turkey bacon is a lighter option
  • 1 cup Mushrooms sautéed, can substitute with other vegetables
  • 1 medium Onion finely diced
  • 3 cloves Garlic minced, or use garlic powder
  • 2 Eggs or substitute with chia seeds
  • 1 cup Breadcrumbs panko for extra crunch
  • 2 tablespoons Worcestershire Sauce soy sauce can substitute
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Fresh Parsley optional for garnish

Method
 

Preparation Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with foil.
  2. In a skillet, cook bacon until crispy, about 6-8 minutes. Set aside and sauté mushrooms in the bacon fat until browned, about 4-5 minutes.
  3. In a large bowl, combine ground beef, eggs, breadcrumbs, onions, garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  4. Transfer the meat mixture to the prepared pan and shape it into a loaf. Press bacon and sautéed mushrooms into an indentation on top, then add shredded Swiss cheese.
  5. Bake for 45-55 minutes until the internal temperature reaches 160°F (71°C).
  6. Let it rest for about 10 minutes before slicing, and garnish with fresh parsley.
