Step-by-Step Instructions for Cowboy Candy
  1. Start by washing the fresh jalapeños thoroughly to remove any dirt. Carefully trim the ends off and slice them into ¼" rings.
  2. In a non-reactive pot, combine apple cider vinegar, white sugar, and brown sugar. Add garlic powder, turmeric, mustard seeds, sea salt, and ground ginger. Simmer over medium heat for about 5 minutes until sugars dissolve.
  3. Add the prepared jalapeño rings to the pot. Increase the heat to a rolling boil, then reduce to a simmer for another 5 minutes, stirring occasionally.
  4. Using a slotted spoon, transfer the cooked jalapeño rings into sterilized jars, packing them tightly.
  5. Return the remaining syrup to heat, boil, and simmer for about 8-10 minutes before ladling it over the jalapeños in the jars.
  6. For long-term storage, process the jars in a boiling water bath for 10-15 minutes depending on jar size.
  7. Allow the jars to cool completely. Refrigerate for up to one week for best flavor.
