Step-by-Step Instructions
  1. In a medium bowl, combine soy sauce, gochujang, honey, brown sugar, rice vinegar, grated ginger, minced garlic, sesame oil, and red pepper flakes. Whisk together until smooth. Reserve about ¼ cup for basting.
  2. Pat the chicken thighs dry with paper towels. Season both sides with salt and pepper. Heat vegetable oil in a skillet over medium-high heat. Place chicken skin-side down and sear for 5-7 minutes until golden brown.
  3. Flip the chicken using tongs. Pour the reserved marinade over the chicken, cover loosely with a lid and reduce heat to medium-low. Cook for 12-15 minutes, spooning sauce over the thighs occasionally.
  4. Preheat the broiler to high. Transfer skillet to the oven and broil for 3-5 minutes, watching closely for caramelization.
  5. Remove chicken from the skillet. If the sauce is too thin, mix cornstarch with water and stir into sauce over medium heat until it thickens.
  6. Coat each chicken thigh with the thickened sauce and drizzle with reserved marinade. Garnish with green onions, sesame seeds, and optional chili slices. Serve over fluffy rice.
