  • 2 cups all-purpose flour or gluten-free flour blend
  • 2 teaspoons baking powder
  • 1 te teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil or melted butter coconut oil or butter work too
  • 1/2 cup milk use a dairy-free alternative for vegan
  • 1 teaspoon vanilla extract
  • 2 cups diced peaches fresh, frozen, or canned
  • 1/4 cup brown sugar optional for topping
  • 1/2 cup chopped pecans optional for texture

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing or lining it.
  2. Dice fresh peaches into small chunks or prepare canned/frozen peaches by drying them well.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, beat eggs and sugar until frothy, then add oil, milk, and vanilla, mixing well.
  5. Combine the dry and wet mixtures gently, then fold in the diced peaches.
  6. Pour the batter into the loaf pan, top with brown sugar and pecans if desired, and bake for 50-55 minutes.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
