  • 1 teaspoon Black pepper to taste
  • ¼ teaspoon Crushed red pepper flakes optional
  • ¼ cup Parmesan cheese for topping, can use nutritional yeast for dairy-free
For the Vegetables
  • 4 cups Broccoli florets fresh or frozen

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C). Prepare a baking sheet for the broccoli.
  2. Spread seasoned broccoli in a single layer on the baking sheet. Roast for about 20 minutes, tossing halfway through.
  3. Bring a large pot of salted water to a boil. Cook pasta according to package instructions, reserving ½ cup of water.
  4. In a nonstick skillet, heat olive oil over medium-low heat. Sauté minced garlic for 1 minute until fragrant.
  5. Lower heat and add ricotta cheese. Whisk until creamy. Gradually add reserved pasta water to adjust consistency.
  6. Stir in roasted broccoli and cooked pasta. Toss until coated with the ricotta sauce, keeping the heat low.
  7. Serve warm, garnished with crushed red pepper flakes and grated Parmesan cheese if desired.
