- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent and fragrant. Introduce the minced garlic to the skillet and cook for an additional 30 seconds until aromatic. Remove from heat and set aside to cool slightly while you prepare the other ingredients.
- In a large mixing bowl, combine the sautéed onion and garlic with a generous handful of chopped baby spinach, ground chicken, breadcrumbs, Greek yogurt, fresh dill, lemon juice, dried oregano, paprika, ground cumin, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Divide the mixture into 8 equal portions using your hands. Gently shape each portion into a patty, about ½ inch thick.
- Wipe the skillet clean and add the remaining olive oil, heating it over medium heat. Carefully place the patties in the skillet and cook for 5-6 minutes on each side until they are golden brown and fully cooked through.
- Once cooked, remove the patties from the skillet and drain any excess oil on paper towels. Optionally, garnish with extra dill or a dollop of Greek yogurt before serving.
