Cooking Steps
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine shredded cooked chicken, uncooked instant rice, cream of chicken soup, and sour cream.
  3. Add frozen diced onion and bell pepper blend, diced tomatoes, chicken broth, and fajita seasoning. Mix thoroughly.
  4. Pour the mixture into the prepared baking dish, spread evenly, and cover tightly with aluminum foil.
  5. Bake in the preheated oven for 35 to 45 minutes until rice is tender and flavors have blended.
  6. After baking, remove the foil and sprinkle remaining shredded cheese on top. Bake uncovered for an additional 5 to 7 minutes.
