Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C) and spray a 9x13 inch baking dish with non-stick cooking spray.
  2. In a large mixing bowl, blend together the shredded chicken, instant rice, cream of chicken soup, sour cream, frozen vegetables, diced tomatoes, chicken broth, and fajita seasoning until well combined.
  3. Pour the mixture into the prepared baking dish and spread it evenly. Cover tightly with aluminum foil.
  4. Bake for 35 to 45 minutes, until the rice is tender and all flavors are absorbed.
  5. Remove the foil and sprinkle the shredded cheese on top. Bake for an additional 10 minutes or until the cheese is melted and bubbly.
