Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the pumpkin puree, egg, and vanilla extract to the creamed mixture and mix until smooth.
  4. Whisk together the flour, baking soda, pumpkin pie spice, and salt; then sift into the wet ingredients and mix gently.
  5. Fold in the chocolate chips, mini marshmallows, and crushed graham crackers.
  6. Drop rounded portions of dough onto the baking sheet, spacing them 2 inches apart.
  7. Sprinkle additional chocolate chips, mini marshmallows, and graham cracker pieces on top of each cookie mound.
  8. Bake for 12-14 minutes, until edges are golden and centers are soft.
  9. Cool for a few minutes on the baking sheet before transferring to a wire rack.
