Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line a muffin tin with paper liners.
  2. In a medium mixing bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In a large bowl, whisk together the vegetable oil and brown sugar until well combined, then add the eggs, sour cream, and vanilla extract.
  4. Gently stir in the flour mixture until just combined, then add the whole milk and mix lightly.
  5. Fold in the chopped fresh peaches evenly throughout the batter.
  6. In a separate bowl, mix together the sugar, melted butter, flour, and a pinch of salt until crumbly.
  7. Divide the muffin batter among the lined cups, filling each about three-quarters full and sprinkle the crumb topping over each.
  8. Bake at 425°F for 5 minutes, then reduce to 350°F (175°C) and bake for another 16-18 minutes.
  9. Remove from the oven and allow to cool in the pan for about 5 minutes before transferring to a wire rack.
