- Preheat your oven to 425°F (220°C) and line a muffin tin with paper liners.
- In a medium mixing bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In a large bowl, whisk together the vegetable oil and brown sugar until well combined, then add the eggs, sour cream, and vanilla extract.
- Gently stir in the flour mixture until just combined, then add the whole milk and mix lightly.
- Fold in the chopped fresh peaches evenly throughout the batter.
- In a separate bowl, mix together the sugar, melted butter, flour, and a pinch of salt until crumbly.
- Divide the muffin batter among the lined cups, filling each about three-quarters full and sprinkle the crumb topping over each.
- Bake at 425°F for 5 minutes, then reduce to 350°F (175°C) and bake for another 16-18 minutes.
- Remove from the oven and allow to cool in the pan for about 5 minutes before transferring to a wire rack.
