  1. In a medium bowl, combine diced fresh peaches with 1 tablespoon of peach schnapps, stirring gently to coat the peach pieces.
  2. Preheat your oven to 300°F (150°C) and prepare two 9x5 inch bread pans by buttering them generously and then dusting with sugar.
  3. In a large mixing bowl, use an electric mixer to beat 1 cup of softened unsalted butter with 2 cups of granulated sugar until light and fluffy, about 3-5 minutes.
  4. Add 4 large eggs to the creamed butter and sugar, one at a time, beating well after each addition. Mix in the remaining peach schnapps, 1 teaspoon of vanilla extract, and 1 teaspoon of almond extract.
  5. In a separate bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon of salt, 1 teaspoon of ground cinnamon, and ½ teaspoon of nutmeg.
  6. Fold a small amount of the dry mixture into the peach mixture to prevent clumping, then gradually combine the remaining flour mixture into the butter mixture until just incorporated.
  7. Gently fold the prepared peach mixture into your batter until just combined.
