  • 1/2 teaspoon Baking Soda Use fresh for perfect rise
  • 1 teaspoon Cinnamon Freshly ground gives amazing flavor

  • 1.5 cups All-Purpose Flour Regular or gluten-free
  • 1 cup Old Fashioned Rolled Oats Ground oats can be used for a smoother loaf
  • 1/2 cup Light Brown Sugar Coconut sugar can be used as a natural alternative
For the Frosting
  • 1 cup Powdered Sugar Consider a substitute if desired
  • 8 oz Softened Vegan Cream Cheese Regular cream cheese can be used if not vegan

Method
 

Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9x5-inch loaf pan.
  2. Mash the overripe bananas in a bowl, then mix in melted vegan butter, maple syrup, plant milk, and vanilla extract until combined.
  3. Add baking powder, baking soda, cinnamon, and salt to the banana mixture, then fold in the flour and rolled oats until just combined.
  4. Pour the batter into the prepared loaf pan, filling about halfway.
  5. Mix melted vegan butter, light brown sugar, and cinnamon in a bowl, then drizzle and swirl it into the batter.
  6. Bake for 55-60 minutes until golden brown and a toothpick inserted comes out clean.
  7. While baking, whisk together softened vegan cream cheese, melted vegan butter, and powdered sugar for the frosting.
  8. Cool the bread for about 10 minutes, then frost with the vegan cream cheese frosting before slicing.
