Ingredients
  

For the Pasta
  • 1 pound Ditali Pasta No. 55 Feel free to substitute with elbow macaroni, small shells, or rotini.
For the Corn Mixture
  • 3-4 cobs Sweet Corn Fresh is best, can use canned or frozen.
  • 1/2 stick Unsalted Butter
For the Creamy Dressing
  • 1.5 cups Mayonnaise Can swap with Greek yogurt or sour cream.
  • 1.5 tablespoons Extra Virgin Olive Oil Plus drizzle to coat the pasta.
  • 1 tablespoon Fresh Lime Juice
  • 2 tablespoons Chili Lime Seasoning Can replace with similar spice blends.
For the Veggies
  • 1 can Black Beans Drained.
  • 1/2 cup Chopped Cilantro
  • 1/2 Green Bell Pepper Chopped.
  • 1/2 Red Bell Pepper Chopped.
  • 2 Jalapeños Diced.
  • 1/4 cup Cucumbers Partially peeled.
For the Topping
  • 1.5 cups Shredded Parmigiano-Reggiano Can swap with Cotija cheese.
  • Crumbled Bacon Optional.

Method
 

Prepare the Corn
  1. Shuck 3-4 cobs of sweet corn and remove the kernels. Melt 1/2 stick of unsalted butter in a skillet over medium heat. Add corn and sauté for about 5 minutes until tender and slightly golden. Season with salt and pepper, then cool.
Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add 1 pound of Ditali Pasta No. 55 and cook until al dente, about 8-10 minutes. Drain and drizzle with 1.5 tablespoons of extra virgin olive oil, then cool completely.
Mix Ingredients
  1. In a mixing bowl, combine the cooled pasta, 1.5 cups of mayonnaise, an additional drizzle of olive oil, and 1 tablespoon of fresh lime juice. Add 2 tablespoons of chili lime seasoning and stir until the pasta is well coated.
Fold in Veggies and Beans
  1. Add diced green and red bell peppers, jalapeños, partially peeled cucumber, sautéed corn, and drained black beans. Fold in chopped cilantro and 1.5 cups of cheese. Mix until combined.
Chill and Serve
  1. Transfer to a serving dish, cover with plastic wrap, and refrigerate for at least 30 minutes. Garnish with additional parsley and cilantro if desired.
