- Preheat your oven to 375°F (190°C).
- Slice the zucchini into thin rounds and sprinkle them with salt. Let the zucchini sit for about 10 minutes to draw out moisture.
- In a mixing bowl, combine the ricotta cheese with dried basil, dried oregano, garlic powder, salt, and black pepper. Blend until smooth.
- Heat olive oil in a skillet over medium heat. Add salted zucchini slices, sauté for about 3–4 minutes until softened but still retain some bite.
- Start assembling the dish in a baking dish with a layer of marinara sauce, followed by zucchini slices, ricotta mixture, and a sprinkle of shredded mozzarella. Repeat layers, finishing with marinara and mozzarella on top.
- Cover the dish with foil and bake for 20 minutes. Uncover and bake for an additional 5–10 minutes until the cheese is golden and bubbly.
- Remove from the oven and let cool for about 5 minutes. Garnish with fresh basil leaves before serving.
