Spaghetti Squash
  • 1 Spaghetti Squash The star of this dish
  • 1 tbsp Vegetable Oil For roasting

Filling
  • 1 lb Steak Any cut, like sirloin or ribeye
  • 1.5 cups Frozen Spinach Or fresh spinach
  • 0.5 cups Sundried Tomatoes Sweet and tangy element
  • 0.5 cups Gorgonzola Crumbles Or blue cheese for unique flavor
Alfredo Sauce
  • 4 tbsp Unsalted Butter Base for rich sauce
  • 1 cup Heavy Cream For creamy texture
  • 1 pinch Ground Nutmeg Adds warmth
  • 1 cup Parmesan Cheese Freshly grated is essential
Topping
  • 1 cup Mozzarella Cheese For gooey topping

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise and scoop out seeds. Drizzle with vegetable oil and season with salt and pepper.
  3. Place squash cut side down on a baking sheet and roast for 30-40 minutes.
Cooking
  1. Season steak with salt and pepper. Heat skillet over medium heat with vegetable oil.
  2. Cook steak for 3-5 minutes per side until desired doneness. Let rest and slice.
Alfredo Sauce Preparation
  1. Melt butter in a saucepan over low heat. Stir in heavy cream.
  2. Add nutmeg and parmesan cheese, stirring until creamy.
Combine and Bake
  1. Fluff up the cooked spaghetti squash with a fork.
  2. Combine fluffed squash, sliced steak, spinach, sundried tomatoes, and half the Alfredo sauce in a mixing bowl.
  3. Spoon the mixture back into the squash halves. Top with mozzarella cheese.
  4. Bake for an additional 15 minutes. Broil for 2-3 minutes for a golden top.
Serving
  1. Remove from oven and drizzle with remaining Alfredo sauce before serving.
