Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (218°C).
  2. In a mixing bowl, toss diced sweet potatoes with olive oil, dried thyme, salt, and pepper. Allow to sit for about 5 minutes.
  3. Spread sweet potatoes on a lined baking sheet and roast for about 30 minutes, turning halfway through.
  4. In a mason jar, combine honey, lemon juice, olive oil, Dijon mustard, and thyme. Shake vigorously until emulsified.
  5. In a large bowl, combine arugula, blueberries, goat cheese, pepitas, and pine nuts. Gently toss together.
  6. Add roasted sweet potatoes to the salad. Drizzle with vinaigrette and toss gently to combine. Serve warm.
