Steps to Prepare Peach Chutney
- Begin by warming 2 tablespoons of extra virgin olive oil in a small saucepan over medium heat. Allow it to shimmer.
- Add one chopped yellow onion to the shimmering oil and sauté for about 3 minutes until soft and translucent.
- Incorporate 1 tablespoon of freshly grated ginger, 1 teaspoon of garam masala, and ½ teaspoon of ground coriander. Cook together for about 1 minute.
- Stir in 4 diced ripe peaches, ¼ cup of apple cider vinegar, 2 tablespoons of maple syrup, ½ teaspoon of salt, and a pinch of red chili flakes. Mix well.
- Reduce heat to low and let the mixture simmer uncovered for 15–20 minutes, stirring occasionally, until it thickens.
- Once thickened, remove from heat and allow to cool completely before transferring to a jar for storage.
