Method
 

Step-by-Step Instructions
  1. Brown the butter in a saucepan until golden brown and nutty, about 5–7 minutes.
  2. Make the crust by mixing cookie crumbs, ground pecans, and brown sugar with half of the browned butter. Press into a greased cake pan and bake at 350°F for 10 minutes.
  3. Prepare the filling by beating cream cheese, brown sugar, salt, and reserved browned butter until smooth, then blend in sour cream and vanilla bean seeds, followed by the eggs.
  4. Pour the filling over the cooled crust and bake in a water bath at 325°F for 1 to 1.5 hours.
  5. Chill thoroughly in the fridge for at least 8 hours.
  6. Make whipped cream by beating heavy cream with brown sugar and salt until soft peaks form.
  7. Serve slices topped with whipped cream.
