Step-by-Step Instructions
  1. In a large pot over medium heat, add sliced beef smoked sausage and brown for about 5-7 minutes.
  2. Add chopped onions and sauté for 5-6 minutes until golden and translucent.
  3. Stir in minced garlic and paprika, cooking for an additional minute until fragrant.
  4. Add diced red potatoes and pour in chicken stock until potatoes are just submerged. Season with salt and pepper.
  5. Increase the heat to bring to a simmer and cook for about 5 minutes.
  6. Reduce heat to low, cover, and let simmer for 30-35 minutes until potatoes are tender.
  7. Taste and adjust seasoning as needed before serving.
