Ingredients
  

For the Soup Base
  • 1 lb Italian Sausage Mild or hot, based on preference
  • 2 tbsp Olive Oil Use butter for extra flavor if desired
  • 1 medium Onion Shallots can be a substitute
  • 2 cloves Garlic Fresh minced is ideal, garlic powder works as well
  • 2 medium Carrots Parsnips can be used instead
  • 2 stalks Celery Omit if unavailable
  • 1 tbsp Dried Oregano Fresh is a flavorful alternative
  • 1 tbsp Dried Basil Fresh is a flavorful alternative
  • 28 oz Diced Tomatoes With their juices
  • 4 cups Chicken Broth Can use vegetable broth for vegetarian version
  • 2 cups Water Optional for consistency
For the Pasta & Creamy Goodness
  • 1 cup Ditalini Pasta Any small pasta can work
  • 1 cup Heavy Cream Substitute with half-and-half or whole milk if desired
  • 2 cups Fresh Spinach Kale or Swiss chard can be substitutes
For Serving
  • 1/2 cup Parmesan Cheese Grated or shredded
  • 1/4 cup Fresh Parsley Chives or basil can also be used

Method
 

Cooking Steps
  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook for 5–7 minutes until browned. Remove and set aside.
  2. In the same pot, add more olive oil if necessary, then add onion, garlic, carrots, and celery. Sauté for about 5 minutes until soft and fragrant.
  3. Sprinkle in oregano and basil, cooking for an additional minute while stirring.
  4. Pour in the diced tomatoes, chicken broth, and water. Stir and bring to a simmer for about 5 minutes.
  5. Return the browned sausage and let it simmer on low heat for 20 minutes.
  6. Add ditalini pasta, cooking uncovered for 10–12 minutes until al dente.
  7. Stir in heavy cream and spinach, cooking for an additional 3–4 minutes until spinach wilts.
  8. Season with salt and pepper, then serve topped with Parmesan cheese and parsley.
