For the Chicken

Method
 

Preparation Steps
  1. In a mixing bowl, combine minced garlic, lemon juice, olive oil, ground cumin, ground coriander, and allspice (if desired). Whisk until well blended.
  2. Coat chicken pieces generously in the marinade, then cover and refrigerate for at least 1 hour, ideally overnight.
  3. Preheat grill to medium-high heat (around 400°F) or set your oven to the same temperature.
  4. After marinating, remove excess marinade and cook chicken on the grill for 20-30 minutes until the internal temperature reaches 165°F, flipping halfway through.
  5. Let chicken rest for about 5 minutes before serving alongside rice or salad.
