Step‑by‑Step Instructions for Fresh Apricot Crisp
  1. Preheat your oven to 350°F (175°C). Lightly grease a medium-sized baking dish with butter or cooking spray.
  2. In a large mixing bowl, combine sliced apricots, lemon zest, cornstarch, ground ginger, and ground cinnamon. Toss gently to coat.
  3. In another bowl, mix together oats, white whole wheat flour, ground cinnamon, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in honey or maple syrup.
  4. Pour the apricot mixture into the greased baking dish and spread evenly. Sprinkle the oat topping over the fruits.
  5. Bake in the preheated oven for approximately 32 minutes until the topping is golden brown and the filling is bubbly.
