Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice each salmon fillet down the middle to create a pocket.
  3. Place the salmon fillets skin-side down and brush with olive oil, then season with salt and pepper.
  4. Heat remaining olive oil in a skillet, add spinach, Italian seasoning, paprika, and cayenne; sauté until spinach wilts.
  5. Remove spinach from heat, let cool slightly, then mix in roasted red peppers, feta, and Parmesan.
  6. Stuff each salmon pocket with spinach-feta mixture, packing it in gently.
  7. Bake stuffed salmon for 12-17 minutes, or until opaque and flakes easily with a fork.
  8. Remove from the oven, let rest for a few minutes, and serve hot.
