  • 1 large Avocado Choose ripe for best texture
  • 0.5 lime Juice of Half a Lime Lemon juice can substitute
  • Salt & Pepper to Taste Adjust according to palate
For the Assembly
  • 4 pieces English Muffins, split Substitute with gluten-free if desired
  • 1 sliced Sliced Tomato Any type of tomato will work
  • 1 cup Finely Shredded Monterrey Jack Cheese Cheddar or mozzarella are alternatives

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mash one ripe avocado until smooth, then mix in wild albacore tuna, lime juice, salt, and pepper until well combined.
  3. Place four split English muffins cut-side up on a baking sheet. Evenly distribute the avocado-tuna mixture on each muffin half.
  4. Slice one fresh tomato and place a slice on each tuna-muffin. Sprinkle shredded Monterrey Jack cheese over the sandwiches.
  5. Bake in the preheated oven for about 10 minutes, watching for the cheese to bubble but not burn.
  6. Switch to broil mode and broil for an additional 2-3 minutes until golden.
  7. Remove from the oven and let cool for a minute before serving warm.
