- In a medium bowl, mash one ripe avocado until smooth, then mix in wild albacore tuna, lime juice, salt, and pepper until well combined.
- Place four split English muffins cut-side up on a baking sheet. Evenly distribute the avocado-tuna mixture on each muffin half.
- Slice one fresh tomato and place a slice on each tuna-muffin. Sprinkle shredded Monterrey Jack cheese over the sandwiches.
- Bake in the preheated oven for about 10 minutes, watching for the cheese to bubble but not burn.
- Switch to broil mode and broil for an additional 2-3 minutes until golden.
