- Begin by heating a large skillet over medium heat. Place one large flour tortilla in the skillet to warm up for about 30 seconds.
- Sprinkle half a cup of shredded mozzarella cheese evenly over the warmed tortilla, placing a second tortilla on top. Cook for 2 to 4 minutes, flipping gently to cook until golden-brown.
- Once both sides are golden and cheese is melted, spread pizza sauce over the top tortilla, add remaining mozzarella and pepperoni slices. Sprinkle optional olives if using.
- Preheat your oven to 400°F (200°C). Transfer the topped pizzadilla to a baking sheet and bake for 5 to 10 minutes until bubbly and slightly browned.
