Step‑by‑Step Instructions for Huli Huli Chicken
  1. In a mixing bowl, whisk together 1 cup of unsweetened pineapple juice, ½ cup of soy sauce, ½ cup of brown sugar, ¼ cup of ketchup, 2 tablespoons of grated fresh ginger, 4 minced garlic cloves, and 1 tablespoon of sesame oil. Set aside 1 cup of marinade for basting.
  2. Place the chicken thighs into a resealable bag, pour the remaining marinade over them, seal the bag and refrigerate for at least 2 hours, ideally overnight.
  3. In a saucepan, pour the reserved marinade and heat over medium-high, simmering for about 8-10 minutes until thickened.
  4. Preheat your grill to medium-high heat (around 400°F). Thread the marinated chicken onto soaked skewers and grill for 12-15 minutes, basting with glaze until cooked through.
