Step‑by‑Step Instructions for Huli Huli Chicken
- In a mixing bowl, whisk together 1 cup of unsweetened pineapple juice, ½ cup of soy sauce, ½ cup of brown sugar, ¼ cup of ketchup, 2 tablespoons of grated fresh ginger, 4 minced garlic cloves, and 1 tablespoon of sesame oil. Set aside 1 cup of marinade for basting.
- Place the chicken thighs into a resealable bag, pour the remaining marinade over them, seal the bag and refrigerate for at least 2 hours, ideally overnight.
- In a saucepan, pour the reserved marinade and heat over medium-high, simmering for about 8-10 minutes until thickened.
- Preheat your grill to medium-high heat (around 400°F). Thread the marinated chicken onto soaked skewers and grill for 12-15 minutes, basting with glaze until cooked through.
- Serve grilled skewers over steamed white rice and garnish with green onions and sesame seeds.

Notes
For best results, soak wooden skewers before grilling to avoid burning. Chicken thighs are preferred for moisture and flavor. A silicone brush helps with even glaze application.
