Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F). Slice the zucchinis in half lengthwise and scoop out the flesh.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Sauté minced garlic and chopped onion until golden.
  3. Add reserved zucchini flesh, salt, pepper, and lemon juice. Cook until tender, about 5 minutes.
  4. Transfer the mixture to a bowl. Add mozzarella, Parmesan, breadcrumbs, and fresh herbs. Mix well.
  5. Stuff the mixture into zucchini shells. Optionally, sprinkle extra cheese on top.
  6. Bake stuffed zucchinis for 25-30 minutes until edges caramelize and filling is bubbly.
  7. Allow the stuffed zucchinis to rest for 5 minutes before serving.
