  • 200 ml Boiling Water No substitutions needed.

  • 150 grams Dark Chocolate (bittersweet) Use dairy-free for vegan.

Method
 

Steps
  1. Begin by placing the dried apricots and blanched almonds in a heat-resistant bowl.
  2. Pour boiling water over the apricots and almonds in the bowl, ensuring they are fully submerged. Allow them to soak for about 5 minutes.
  3. Transfer the soaked apricots and almonds into a food processor. Blend on high speed for about 1-2 minutes until a thick paste forms.
  4. Take about a tablespoon of the blended mixture and roll it into a ball, creating about 12 balls.
  5. Melt your dark chocolate using a microwave or bain-marie until completely melted and smooth.
  6. Using a fork, dip each ball into the melted chocolate until fully coated.
  7. Arrange the coated Chocolate Apricot Balls on a parchment-lined tray and let them set for about 30 minutes.
