Preparation Steps
  1. Start by placing the boneless, skinless chicken thighs directly into your slow cooker, spread out evenly.
  2. Pour in the low-sodium chicken broth and soy sauce over the chicken, then add minced garlic and ginger. Stir gently to combine.
  3. Toss in the red bell pepper, matchstick carrots, and broccoli or snow peas, stirring gently to combine.
  4. Cover and cook on low for 6 to 8 hours until the chicken is tender and shreds easily.
  5. About 30 minutes before serving, cook the lo mein noodles in boiling water until al dente.
  6. Combine the chicken and vegetable mixture with the drained noodles, drizzle with sesame oil, and toss to combine.
  7. Serve in bowls, garnished with green onions and sesame seeds.
