Method
 

Step‑by‑Step Instructions
  1. Preheat a non-stick skillet over medium heat and drizzle in olive oil.
  2. Slice the bagel in half and toast the cut side in the skillet.
  3. Sprinkle half of the Parmesan cheese on the cut side and let it melt.
  4. Layer half of the basil pesto over the melted cheese.
  5. Flip the bagel half onto the pesto and cheese side.
  6. Crack an egg into the hole of the bagel and season.
  7. Repeat for the second bagel half once the first is done.
  8. Combine salad ingredients in a bowl and toss.
  9. Top crispy bagel halves with the salad and serve immediately.
