Step 1: Make the Remoulade Sauce
- Mix mayonnaise, Dijon mustard, finely chopped capers, lemon juice, and fresh dill in a bowl until well combined and creamy. Cover and refrigerate.
Step 2: Cook the Salmon
- Preheat your oven to 375°F (190°C), place the salmon on a parchment-lined baking sheet, drizzle with oil, and season with salt and pepper. Bake for 15-20 minutes, until the salmon flakes easily.
Step 3: Sweat the Shallot and Garlic
- Melt butter in a skillet over medium heat, add shallot, and sauté for about 3 minutes. Add garlic, sauté for an additional minute, then remove from heat.
Step 4: Form the Croquettes
- In a bowl, combine flaked salmon, mashed potatoes, seasoned breadcrumbs, sautéed shallots and garlic, Old Bay seasoning, and Dijon mustard. Shape into oval croquettes.
Step 5: Pan Fry the Croquettes
- Heat oil in a frying pan over medium-high heat until it reaches 375°F. Fry croquettes in batches for 2-3 minutes on each side until golden brown.
Step 6: Serve the Croquettes
- Arrange croquettes on a platter, garnish with parsley, and serve hot with the remoulade sauce.
