Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 12-cup muffin pan with butter or cooking spray.
  2. In a medium bowl, combine melted butter, cream, minced garlic, salt, pepper, and nutmeg. Mix well and let sit for 1 minute.
  3. Slice the starchy potatoes thinly using a sharp knife or mandoline, aiming for about 1/8-inch slices.
  4. Layer potato slices in each muffin cup, adding cream mixture and Dubliner cheese between layers, finishing with a layer of cheese on top.
  5. Cover the muffin pan with aluminum foil and bake for 25 minutes.
  6. Remove the foil and bake uncovered for an additional 20 minutes until the tops are golden brown.
  7. Let cool for 5 minutes before loosening edges with a knife and serving garnished with fresh chives.
