Method
 

Preparation Steps
  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, melted unsalted butter, and brown sugar in a bowl. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  3. Melt an additional unsalted butter in a saucepan to golden brown and nutty, about 5-7 minutes. Set aside to cool.
  4. In a large bowl, beat softened cream cheese and granulated sugar until smooth. Add vanilla bean paste and mix until evenly combined.
  5. Add eggs one at a time, mixing just until incorporated after each addition. Scrape the bowl to ensure all ingredients are mixed well.
  6. Gently fold in sour cream and cooled brown butter until just combined.
  7. Pour filling into cooled crust and smooth the top with a spatula.
  8. Bake for 55-65 minutes until edges are set with a slight jiggle in the center. Cool in the oven for about an hour.
  9. Remove from oven, let cool to room temperature, cover, and refrigerate for at least 4 hours or overnight before serving.
