- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering, about 1–2 minutes.
- Add 1 pound of ground beef, breaking it apart with a spatula. Cook for 5–7 minutes until browned. Season with salt and pepper, and drain excess fat.
- Push the ground beef to one side and add 4 cloves of minced garlic, cooking for about 1 minute until fragrant.
- Sprinkle 1 teaspoon of onion powder and 1 teaspoon of Cajun seasoning over the beef. Stir to combine and cook for 30 seconds.
- Add 1 cup of uncooked long-grain white rice, mixing well with the beef. Pour in 2 cups of beef broth and bring to a gentle boil.
- Once boiling, reduce heat to low, cover, and let simmer for 18–20 minutes, stirring occasionally.
- Once rice is cooked, remove from heat. Stir in 1/2 cup of grated parmesan and 1 cup of shredded cheddar until melted and creamy.
- Taste and adjust seasoning with additional salt and pepper if needed. Serve immediately.
