  3. Heat olive oil in a skillet, sear chicken thighs for 3-4 minutes per side.
  4. In the same skillet, reduce heat, add butter, shallots, and thyme; sauté until translucent.
  5. Deglaze with brandy, scraping up browned bits; let simmer for 2 minutes.
  6. Add chicken broth, simmer for 5 minutes until reduced by half.
  7. Stir in heavy cream, mix well, and simmer until thickened for 2-3 minutes.
  8. Return chicken to the skillet, cover, and cook for 6-8 minutes until cooked through.
  9. Garnish with parsley and serve over pasta or sautéed vegetables.
