Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a skillet, melt a tablespoon of butter and sauté diced onion until translucent, about 5 minutes. Add minced garlic and sauté for an additional 30 seconds.
  3. In a large mixing bowl, combine your rice with chicken broth, and fold in the onion and garlic mixture.
  4. Fold in shredded chicken, carrots, peas, and half of the cheese into the rice mixture.
  5. Pour the mixture into the greased baking dish, spreading it evenly and sprinkling the remaining cheese on top.
  6. Cover with aluminum foil and bake for 45-50 minutes, or until the rice is tender.
  7. After baking, remove the foil and broil for an additional 5-10 minutes until the cheese is golden brown.
  8. Let it rest for 5-10 minutes before serving, garnishing with fresh herbs if desired.
