Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your baking dish.
  2. Melt 4 tablespoons of unsalted butter over low heat. Sauté the sliced green onions for about 3-4 minutes until they soften.
  3. Stir in 2 tablespoons of all-purpose flour, salt, and pepper to form a roux. Gradually whisk in 1 cup of heavy whipping cream and 1 cup of half-and-half, whisking for about 5 minutes until the sauce thickens.
  4. Remove from heat and mix in 1½ cups of shredded sharp cheddar cheese until melted and well combined.
  5. Fold in 3 cups of cooked crinkle-cut carrots and 1 tablespoon of parsley flakes into the cheese sauce.
  6. Transfer the creamy carrot mixture into a greased 9 x 13-inch baking dish, spreading it out evenly.
  7. In a separate bowl, combine 2 cups of crushed cornflakes with the remaining melted butter until well coated.
  8. Sprinkle the cornflake mixture evenly over the casserole, cover with foil, and bake for 40 minutes.
