Salad Base
  • 6 cups shredded coleslaw mix use finely shredded cabbage if unavailable
  • 0.25 cup sliced green onion chives serve as a great alternative
Sweetness and Crunch
  • 1 cup dried cranberries you can swap with raisins or other dried fruits
  • 0.5 cup roasted salted sunflower kernels slivered almonds or chopped walnuts can also be used

Method
 

Steps
  1. In a small mixing bowl, whisk together mayonnaise, red wine vinegar, sugar, kosher salt, and ground black pepper until smooth. Set aside.
  2. In a large bowl, add shredded coleslaw mix and sliced green onions. Gently toss to ensure even distribution.
  3. Pour the prepared dressing over the coleslaw mixture, and gently fold to coat everything evenly.
  4. Cover the bowl with plastic wrap and refrigerate for about 1 to 2 hours.
  5. Fold in dried cranberries and roasted salted sunflower kernels just before serving.
  6. Garnish with additional dried cranberries and sliced green onion before serving.
