  • 1 cup shredded cheddar cheese can mix in mozzarella
  • 4 ounces cream cheese or use low-fat
  • 1 teaspoon garlic powder or use fresh minced garlic
For the Coating
  • 1 cup breadcrumbs panko can be used for extra crispiness
  • 0.5 cup grated Parmesan cheese

Method
 

Steps
  1. Peel and cube the potatoes, boil in salted water until fork-tender, and drain.
  2. Return potatoes to pot, add butter, milk, and salt, then mash until creamy.
  3. Stir in cheddar and cream cheese until fully blended.
  4. Add garlic powder and mix thoroughly.
  5. Preheat oven to 400°F. Mix breadcrumbs and Parmesan in a dish.
  6. Form small balls from the cheesy mixture and coat in breadcrumb mix.
  7. Place on a greased baking sheet and bake for 25-30 minutes until golden brown.
  8. Cool for 5 minutes and then serve warm.
