  • 3 cups Cooked Chicken Shredded rotisserie chicken works well.
  • 2 cups Cooked Rice Brown rice or wild rice recommended.
  • 2 cups Broccoli Florets Fresh or thawed frozen.
  • 1 can Cream of Chicken Soup Cream of mushroom can be used as alternative.
  • 1 cup Sour Cream Greek yogurt can be used instead.
  • 1 cup Milk Chicken broth can also be used.
  • 2 cups Shredded Cheddar Cheese Colby Jack or Monterey Jack as alternatives.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Breadcrumbs Optional for topping.
  • 2 tablespoons Melted Butter Optional for breadcrumb topping.
For Serving
  • Salad Fresh salad complements the casserole.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
  2. Cook the rice according to package directions (15-20 minutes for white rice). Steam the broccoli florets for 2-3 minutes until tender and bright green.
  3. In a large mixing bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, onion powder, paprika, salt, and black pepper. Mix until smooth.
  4. Fold in the cooked chicken, rice, steamed broccoli, and 1 cup of shredded cheddar cheese until evenly combined.
  5. Transfer the mixture into the prepared casserole dish and sprinkle breadcrumbs and remaining cheese on top if desired.
  6. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
  7. Let the casserole cool for about 5 minutes before serving.
