- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil and butter over medium heat, then add onions and sauté for 30–40 minutes until golden brown.
- Sprinkle in salt, black pepper, and optional sugar as onions caramelize.
- Roll out puff pastry on a floured surface and cut into shapes to fit tart shells.
- Brush the tops of pastry shells with beaten egg for a golden finish.
- Combine warm caramelized onions, goat cheese, optional heavy cream, and fresh thyme in a mixing bowl.
- Spoon the filling into prepared pastry shells.
- Bake tarts in the preheated oven for 20–25 minutes until golden brown.
- Allow tarts to cool, then drizzle with honey and garnish with fresh thyme before serving.
