Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and butter over medium heat, then add onions and sauté for 30–40 minutes until golden brown.
  3. Sprinkle in salt, black pepper, and optional sugar as onions caramelize.
  4. Roll out puff pastry on a floured surface and cut into shapes to fit tart shells.
  5. Brush the tops of pastry shells with beaten egg for a golden finish.
  6. Combine warm caramelized onions, goat cheese, optional heavy cream, and fresh thyme in a mixing bowl.
  7. Spoon the filling into prepared pastry shells.
  8. Bake tarts in the preheated oven for 20–25 minutes until golden brown.
  9. Allow tarts to cool, then drizzle with honey and garnish with fresh thyme before serving.
