Cooking Steps
- Heat a heavy skillet over medium-high heat and add olive oil and butter. Once the butter melts, add the Cajun-seasoned steak tips. Sear for about 3–4 minutes on each side until browned. Remove from pan and set aside.
- In a large pot, bring salted water to a rolling boil. Add rigatoni and cook until al dente, about 10–12 minutes. Reserve 1/2 cup pasta water, then drain.
- In the same skillet, add more butter and sauté minced garlic over medium heat until fragrant. Pour in heavy cream and stir as it simmers.
- Stir in fresh Parmesan cheese until melted and smooth. If using other cheese, add it now. Adjust seasoning with salt, pepper, and Cajun seasoning.
- Toss drained rigatoni into the sauce, mixing thoroughly. Add reserved pasta water if needed for consistency. Fold in seared steak tips.
- Serve plated with extra Parmesan cheese and black pepper. Optionally, drizzle with hot sauce.
