Cooking Steps
  1. Heat a heavy skillet over medium-high heat and add olive oil and butter. Once the butter melts, add the Cajun-seasoned steak tips. Sear for about 3–4 minutes on each side until browned. Remove from pan and set aside.
  2. In a large pot, bring salted water to a rolling boil. Add rigatoni and cook until al dente, about 10–12 minutes. Reserve 1/2 cup pasta water, then drain.
  3. In the same skillet, add more butter and sauté minced garlic over medium heat until fragrant. Pour in heavy cream and stir as it simmers.
  4. Stir in fresh Parmesan cheese until melted and smooth. If using other cheese, add it now. Adjust seasoning with salt, pepper, and Cajun seasoning.
  5. Toss drained rigatoni into the sauce, mixing thoroughly. Add reserved pasta water if needed for consistency. Fold in seared steak tips.
  6. Serve plated with extra Parmesan cheese and black pepper. Optionally, drizzle with hot sauce.
