- Wash and dice two zucchinis and a couple of bell peppers into bite-sized pieces. Drain and rinse a can of chickpeas.
- In a large mixing bowl, combine the diced zucchini, bell peppers, chickpeas, and tomato sauce. Sprinkle in your spices and stir well.
- Preheat your oven to 375°F (190°C). Grease a 9x13 inch dish and pour in the vegetable mixture, spreading it evenly.
