Ingredients
  

For the Potatoes
  • 4 pieces Baking Potatoes or sweet potatoes for a sweeter twist
  • 3 tablespoons Olive Oil or a neutral oil if necessary
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper adjust to taste
  • 1 teaspoon Red Chilli Flakes omit for a milder dish
For the Feta Mixture
  • 200 grams Feta Cheese try Boursin or a vegan alternative
  • 1 whole Garlic roasted or minced
  • 1 whole Lemon zest for added freshness
  • 1 tablespoon Honey or agave syrup for vegan option
For the Herbs
  • 1 teaspoon Dried Thyme adjust if using fresh herbs
  • 1 teaspoon Dried Oregano adjust if using fresh herbs
  • 1 tablespoon Fresh Basil or parsley, if desired

Method
 

Cooking Instructions
  1. Preheat your oven to 200°C (390°F).
  2. Wash and cube the baking potatoes, then par-boil in salted water for 6-10 minutes until slightly tender. Drain and steam dry for 2-3 minutes.
  3. Toss the par-boiled potatoes with olive oil, thyme, oregano, salt, and black pepper in a baking dish.
  4. Drizzle a whole head of garlic with olive oil, wrap in foil, and place in the baking dish.
  5. Roast potatoes and garlic in the oven for 30-40 minutes until golden brown and crispy.
  6. Crumble feta over the potatoes, squeeze half a lemon juice on top, and return to the oven for another 15 minutes.
  7. Mash the roasted garlic and mix into the potatoes with remaining lemon juice and fresh basil.
  8. Drizzle honey and sprinkle red chilli flakes over the potatoes, then serve.
