- Preheat your oven to 200°C (390°F).
- Wash and cube the baking potatoes, then par-boil in salted water for 6-10 minutes until slightly tender. Drain and steam dry for 2-3 minutes.
- Toss the par-boiled potatoes with olive oil, thyme, oregano, salt, and black pepper in a baking dish.
- Drizzle a whole head of garlic with olive oil, wrap in foil, and place in the baking dish.
- Roast potatoes and garlic in the oven for 30-40 minutes until golden brown and crispy.
- Crumble feta over the potatoes, squeeze half a lemon juice on top, and return to the oven for another 15 minutes.
- Mash the roasted garlic and mix into the potatoes with remaining lemon juice and fresh basil.
- Drizzle honey and sprinkle red chilli flakes over the potatoes, then serve.
