  • 1 tbsp Olive Oil or melted butter
  • 1 tbsp Honey or maple syrup
  • Fresh Thyme Sprigs
  • Flaky Sea Salt
  • Black Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (390°F). Slice the ripe plums and toss them with olive oil, honey, fresh thyme, flaky sea salt, and black pepper. Spread them on a lined baking tray and roast for 15–18 minutes.
  2. Roll out the thawed puff pastry on parchment paper. Place the wheel of brie in the center and spoon roasted plums on top, then fold and seal the pastry around the cheese.
  3. Brush the top of the wrapped brie with egg wash and bake for 20–25 minutes until golden brown.
  4. Allow to rest for 5–10 minutes before slicing. Drizzle with extra honey or glaze before serving warm.
